At Redrose Christmas baking means one thing above all else: our legendary mince pies.
What makes them so special? It’s our overnight-soaked fruit filling — gently spiced, rich, and lifted with a generous splash of dark rum — that transforms a classic festive treat into something truly unforgettable.
They’ve become such a staple of our celebrations that this year we even enjoyed a fresh batch in the office on our Christmas Jumper Day. Nothing brings the team together quite like warm mince pies, the smell of spices drifting through the office, and a bit of friendly debate over whose jumper was the most outrageous.
Whether you’re baking for friends, family, or a festive gathering, this recipe brings cosy winter flavours together in perfect harmony. Below, you’ll find the exact recipe we use at Redrose — simple, fragrant and absolutely delicious.
🍊 Redrose Special Mince Pie Filling – makes 18
Ingredients
- 150 g sultanas
- 100 g candied lemon peel, roughly chopped **
- 1 orange – use half the grated zest and half the juice
- ½ apple, finely grated
- 50 g unsalted butter, melted
- 2 tsp mixed spice
- 1 tsp ginger powder
- 40 g light brown caster sugar
- 100 ml dark rum
** you can make this yourself if you have the time! We used the recipe from Waitrose. But you can buy it at most supermarkets.
Method – Filling – watch the video below
- In a bowl, combine the sultanas with all remaining ingredients.
- Mix well, cover, and leave to soak in the fridge for 12 hours or overnight.
🥣 The Pastry
Ingredients
- 250 g white flour
- 125g cold unsalted butter, cut into small pieces
- 10 egg yolk
- 100g caster sugar
Method – Pastry
- Put all ingredients in a food processor or if making by hand
- Combine flour and sugar in a bowl.
- Add the cold butter and rub in with your fingertips until you have a fine, crumbly mixture.
- Add the egg yolk and mix quickly to form a soft, smooth pastry—do not knead.
- Flatten, cover, and chill for 30 minutes.
⭐ Assembling the Mince Pies
Extras
- 1 egg yolk
- ½ tbsp sugar
- One 12-hole and one 6-hole tins (approx. 7 cm diameter), greased with butter and floured
Method – Forming the Pies
- On a lightly floured surface, roll the pastry out to around 3 mm thickness.
- Cut out 18 circles (7 cm diameter) and press them into the muffin tins.
- Cut out 18 pastry stars and place one on top of each filled case.
- Brush the tops with egg yolk and spri
nkle lightly with sugar.
🔥 Baking
- Bake in the centre of a preheated oven at 220°C 200 Fan Oven for 20 minutes Allow them to cool slightly before removing from the tins, then transfer to a rack to cool completely.
